What We Are Eating

Lycopene is a potent antioxidant found in tomatoes, watermelon, guava, papaya, apricots, pink grapefruit, blood oranges, and other foods. This powerful antioxidant helps prevent various forms of cancer, heart disease, and other serious diseases.

WATERMELON SOUP
Serves 4-6

Ingredients:
• 8 - 10 cups of seeded watermelon chunks
• 1 fennel bulb, finely chopped, with fronds reserved for garnish
• 2lbs of fresh fruit, cut in small cubes (peaches, nectarines, apricots, melon, grapes, cherries, etc.)
• 1 handful of golden raisins
• 3 to 4 leaves of fresh mint

Preparation:
In food processor bowl (or blender) puree watermelon with chopped fennel until completely liquefied.
Transfer to a large serving bowl, stir in fruit and mint, cover and refrigerate for at least 4 hours before serving.

  • Free of addictive behaviors and dependence on substances

Remember, wellness is a choice. The first step towards wellness is simple and you can take it right now. Say to yourself, “I choose to be well.” Base your daily and long-term decisions on this goal and watch yourself reaping the rewards of balance, happiness, and good health.

Wellness is something we must consciously choose. Developing wellness involves commitment and some hard work. Wellness is the fruit of a most noble goal: taking personal responsibility for living a quality life. – M.L.
